Servings: 4 pieces

Ingredients

  • 2 teaspoon dry yeast
  • 1 tsp granulated sugar
  • cup milk (160 ml), warm
  • 2 cup bread flour (260 gr)
  • 2 tablespoon plain yogurt
  • 2 tablespoon olive oil
  • ½ teaspoon salt
  • some chopped chives
  • some chopped coriander
  • some shredded mozzarella
  • some garlic powder

Instructions

  • Add sugar into warm milk and stir. Then sprinkle dry yeast and give it a stir also. Set aside for it to get foamy for around 5 minutes.

  • In a standing mixer bowl, add in flour, yogurt, olive oil, salt and yeast mixture. Mix to incorporate everything and then knead for 10 minutes. Form the dough into a ball and place it in an oiled bowl. Coat the dough with some oil to prevent crust forming on it.

  • Cover the bowl tightly with cling film and leave it in a warm and draft free place until the dough rises double its size.

  • Flour the working surface and place the risen dough on it. Lightly knead it into a log and cut it into 4 equal pieces. Form each piece into a ball.

  • Take 1 ball and roll it into a round disk. Put some chopped chives in the center followed by shredded mozzarella and some garlic powder. Wrap the filling with the edges of the dough and pinch the seams together.

  • Lightly wet the top surface of the ball with some water and then dip it in a plate containing chopped coriander leaves. Place the ball on the working surface again, seam side down. Roll it into an oval shape of 5x8 inch (13x20 cm). Place the rolled dough on a lightly floured baking tray while you continue with the rest of the balls.

  • Heat an iron cast skillet on high medium heat until it's smoking. Place the rolled dough coriander side down onto the pan and cook for 1 ½ minutes per each side or until fully cooked. Transfer to a plate and paint it with some oil or melted butter. Cover with a kitchen cloth to maintain it warm while you continue cooking the rest. Best served warm, enjoy!

Does it have to be bread flour specifically, would plain or self raising work just as well? Or do I need to add something extra to the flour to help in replace of bread flour?

    Thank you in advance

Hi, Lana! Different types of flour has different water absorption level. If you want to use all-purpose flour, you can, but you'd have to use more amount, and I can't promise the texture would be the same though. Hope it helps!

Hey Cami! Of course I remember the place, we went back several times over the years. Hopefully it still exists though (with everything that's been going on). It's called Masala73. It's a small restaurant, cosy and cool. Their food was delish! Hope it helps.

FAQs

What's the difference between flatbread and naan bread? ›

Naan is another flatbread traditionally served in Indian restaurants but the difference is that there will already be a filling inside these flatbread pockets. Naan may be stuffed with curd, fresh desiccated coconut, butter, nigella seeds, and raisins.

Why do you put yogurt in naan bread? ›

Salt could be optional if you are having naan with a curry. (Cause curry usually has salt and the bread might not need it). Variations like milk or yogurt is used instead of water to make dough soft and fluffy. This would change the texture and flavor of the bread.

Why is my naan bread not fluffy? ›

Rolling Vs stretching dough: Naan is always hand stretched and not rolled with a rolling pin. Sometimes rolling toughens the dough and suppresses the bubbles making dense flatbreads. Hand stretched naan have a lovely fluffy & light texture.

Why isn't my naan bread puffing up? ›

If your naan breads are cooking/browning too quickly (before they can puff up and form bubbles), reduce the heat. If they're not puffing up and are taking too long to brown, increase the heat.

Is naan bread healthier than regular bread? ›

While it may contain more carbs and sugars, it earns its reputation as a healthy alternative with its relatively generous amounts of protein and fiber. Despite its high carb content, naan can be considered a more nutrient-dense alternative to white bread and pita.

What bread is closest to naan? ›

Kulcha is a mildly leavened bread prepared with all-purpose flour without any yeast, but rather leavened with yogurt and/or baking powder. Though it's similar to naan, you don't need a tandoor oven to make kulcha; you can easily prepare it on a griddle.

Why do you sprinkle water on naan bread? ›

Can I use Greek yogurt instead of plain yogurt in naan? ›

You can use a 2% or fat-free Greek yogurt, your bread may just not be as pillowy soft. Olive oil. Canola or avocado oil can be used in place of olive oil. Baking powder.

Is naan better with or without yogurt? ›

Milk, and dairy in general, will give the naan a soft, more tender crumb than water alone, but I'm not sure you want to go too far down that road, as you risk sacrificing that aforementioned chewy texture. A little yoghurt for tang and richness, mixed with rather more water, seems a good compromise.

What does naan mean in English? ›

: a round flat leavened bread especially of the Indian subcontinent.

Is yeast or baking powder better for naan? ›

Naan is essentially a leavened flatbread, which means it contains some form of raising agent to provide its airy texture. Hence for this naan, the raising agent we will be using is yeast. Other variations do exist which may utilise self raising flour or baking powder/baking soda.

Make the dough up to the end of Step 5 – Proof 1. Then after the dough has doubled in size, put the bowl with the dough it in the fridge overnight (I've done 24 hours). Do not punch dough down or touch it – just put it in as is. The fridge stops the dough from rising any further.

Is Indian flatbread the same as naan? ›

Roti, typically made with whole wheat flour, is thin and unleavened (made without yeast or other raising agent), offering a denser texture. Naan, on the other hand, uses all-purpose flour and yeast, resulting in a thicker, chewier bread often cooked in a tandoor oven.

Is naan flatbread the same as pita bread? ›

Naan bread is soft, fluffy, and chewy, whereas pita bread is denser with a slightly crispy texture on the outside. Naan bread also has a buttery flavor due to the ghee and buttermilk in the dough, which adds an extra dimension of flavor compared to pita bread's more neutral taste.

What makes naan bread different? ›

The name comes from the Persian word, non, for bread. Unlike pita, naan has yogurt, milk, and sometimes eggs or butter in it, resulting in a softer texture.
