For Masala Dal
2 1/2 tbsp yellow moong dal (split yellow gram)
2 1/2 tbsp masoor (split red lentil) dal
2 1/2 tbsp urad dal (split black lentils) or chilkewali urad dal (spit black gram with skin)
2 1/2 tbsp toovar (arhar) dal
salt to taste
1 tbsp ghee
1/4 cup grated onions
1/2 cup finely chopped tomatoes
salt to taste
To Be Ground Into A Smooth Paste (using Little Water)
3 garlic (lehsun) cloves
1 tsp coriander (dhania) seeds
1/2 tsp cumin seeds (jeera)
1/4 tsp turmeric powder (haldi)
1 tbsp chopped coriander (dhania)
4 whole dry kashmiri red chillies , broken into pieces
1/2 tbsp sliced ginger (adrak)
1 stick cinnamon (dalchini)
2 cloves (laung / lavang)
2 whole black peppercorns (kalimirch)
For The Garnish
2 tbsp finely chopped coriander (dhania)
For Serving

- In a bow put2 1/2 tbspyellow moong dal (split yellow gram).The fibre (4.1 g in ¼ cup) present in yellow moong dal prevents the deposition of bad cholesterol (LDL) in the arteries which promotes ahealthy heartin turn.
- Add2 1/2 tbspmasoor dal (split red lentil).1 cup of cookedMasoor dalgives 19 grams ofprotein.
- Add2 1/2 tbsp urad dal or chilkewali urad dal (spit black gram with skin).It is alsohigh in fibreandgood for heart, good forlowering cholesterolandgood for diabetes.
- Add2 1/2 tbsptoovar (arhar) dal.Toor Dal (tuvar dal, arhar dal, toovar dal): Toor dal isrich in proteins, the building block of good health.
- Add enough water to wash the dals. See the dirt. You will need to change the water several times.
- Washed dals.
- Drain.
- Put washed and drained dals in a pressure cooker.
- Add salt to taste. We added 1/4thtsp salt.
- Add1½ cups of water.
- Mix well.
- Pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.

- In a mixer put3garlic (lehsun) cloves.
- Add1 tspcoriander (dhania) seeds.
- Add1/2 tspcumin seeds (jeera).
- Add1/4 tspturmeric powder (haldi).
- Add1 tbspchopped coriander (dhania).
- Add4whole dry kashmiri red chillies, broken into pieces.
- Add1/2 tbspsliced ginger (adrak).
- Add1stickcinnamon (dalchini).
- Add2cloves (laung / lavang).
- Add2wholeblack peppercorns (kalimirch).
- Gradually add 6 tablespoonswater to grind into a paste.
- Grind to a smooth paste.

- To make masala dal recipe | mixed masala dal | dal fry | healthymasala dal |heat 1 tbls ghee in a deep non-stick kadhai.
- Add1/4 cupgrated onions.
- Sauté on a medium flame for 1 to 2 minutes.
- Add the prepared paste.
- Sauté on a medium flame for another 1 to 2 minutes.
- Add1/2 cupfinelychopped tomatoes.
- Add2 tbsp of water.
- Mix well.
- Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the cooked dal.
- Add salt to taste. We added 1/2 tsp salt.
- Add 1 cup water.
- Mix well.
- Cook on a medium flame for 3 minutes, while stirring occasionally.
- Garnish masala dal | mixed masala dal | dal fry | healthymasala dal |with coriander.
- Serve masala dal | mixed masala dal | dal fry | healthymasala dal |hot with rice or parathas.
