Am I the only one who starts singing this when you think of a peanut butter & jelly sandwich!?! Well, today with these PB & J Cookies you are going to start singing all the time. They are so good!

I started with our basic peanut butter cookie recipe, added some really yummy peanut buttercream frosting to the underside of each cookie, a dollop of our favorite jelly, and smashed them together. And there you have it a simple favorite turned into the best PB & J Cookies. What could get better than that.

Ingredients

  • 1/2 cup shortening
  • 1/2 cup butter (softened)
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cup flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups peanut buttercream frosting*
  • 1/4 to 1/2 cup jam or jelly

Peanut Buttercream Frosting

  • 1 cup unsalted butter (2 sticks - softened)
  • 2/3 cup creamy peanut butter
  • 2 cups powdered sugar (or a little less)
  • 1 1/2 tsp vanilla extract

Equipment

  • Large Mixing Bowl

Instructions

  • Preheat oven to 350 degrees

  • In a large bowl cream together the shortening, butter, peanut butter, and sugars

  • Add 1 egg at a time, mixing in between

  • Stir in the vanilla extract

  • In a medium bowl, combine the flour, salt, baking powder, and baking soda

  • Add to the wet ingredients and stir together, scraping down the sides as needed

  • Roll into 1 1/2 inch diameter balls, place on cookie sheet, flatten with crisscross fork markings

  • Bake for 9 minutes

  • Remove from oven and let cool on cookie sheet 5 minutes

  • Remove to cooling rack to finish cooling

  • Frost on the underside each cookie with peanut buttercream frosting

  • Add 1 tsp of jelly to one cookie, top with another cookie

  • Eat peanut butter and jelly cookies

Peanut Buttercream Frosting

  • Cream together the butter and peanut butter until smooth

  • Add the powdered sugar 1/2 cup at a time, beating on low in between each add

  • Add the vanilla and beat on high for a couple of minutes until smooth

    I haven’t heard that song before! That’s fun. My kids would like it. This recipes looks so yummy! I love cookies and this is a fun twist!
